Canberra's Best Sushi


Sushi is a dish best served cold. This artful cuisine goes back centuries and although for most of us it is synonymous with Japan, it is thought to have originated in South East Asia. But of course, these days it is enjoyed everywhere.

Traditionally reliant on the sea for much of their diet, the Japanese began salting raw fish and fermenting it in rice, to help preserve it. Eventually the fermentation process was done away with and sushi now encompasses a variety of dishes that use sushi rice, a sticky rice seasoned with sweet rice-wine vinegar.

Although it is still popular for sushi to be made with raw fish or shellfish, there are now many choices that incorporate fresh vegetables or meat, even egg, which can be prepared raw, cooked or marinated.

Some popular sushi dishes include ‘nigiri’, lovely balls of rice topped with raw fish, ‘nori’ rolls made of rice filled with fish, meat or veggies and wrapped in dried seaweed, and ‘inari where sushi rice is encased in deep fried tofu.

It is usual to enjoy sushi with soy sauce, but if you like a bit more zing, try mixing the soy with wasabi. This fabulously coloured green paste has a bit of a kick, so take it slowly.

Other accompaniments that go well with sushi include ‘gari’ a sweet, pickled ginger, which cleanses the palate and helps digestion, and ‘ocha’ otherwise known as green tea.
