The explosions of colour that India is famous for is only matched by the infinite variety and taste sensations to be found in Indian cooking. And what’s more, the many myths surrounding this wonderful cuisine, such as it’s fatty, unhealthy and always hot are mere humbug.

Indian food incorporates an exotic and extensive range of spices, herbs, vegetables, meats and fruits in dishes that span vast regional variations and cooking techniques. It has also absorbed many influences from the Hindu and Mongolian cultures as well as British, Portuguese and European traditions dating back to the earliest days of the spice trade.

Indian cooking uses fresh ingredients and, when done well, is done from scratch and will often incorporate all the elements you need for a balanced meal such as carbs, proteins, fats and fibre. In addition, popular spices such as tumeric, ginger and garlic are famed for their medicinal content, so the news is all good.

Curry is a bit of a catch-all name for Indian dishes, it is ‘garam masala’, basically an all purpose mix of spices, that is most commonly used to enhance flavours. And while dishes may use lots spices the famed heat of Indian food has to do with chilli content, which can be reduced or omitted and still be true Indian.

Familiar names of Indian dishes include Rogan Josh, Palak Paneer, Chicken Tikka Masala and Tandoori Chicken, but don’t be afraid to try something new, the flavours will astound!

From little things big things grow, they say. Sultan’s kitchen started off as a basic byo and is now a trio of grand restaurants. These opulent eateries are famous for their tandoor oven cuisine. A visit to any one of them is not complete without trying the chelo kebab – marinated lamb grilled in the tandoor. Other must haves include the chicken tikka and the beef nisha – beef cooked in a sweet, nutty sauce. There is an impressive range of breads with the naan amini (filled with spinach and cheese) being a stand out. If you like you curries spicy this is the place for you.
