As any Perth native led by their tastebuds is aware, Must offers the city some of its best French inspired bites. Chef partner Russell Blaikie has become something of a celebrity chef. If you fancy a boudin blanc or un peu Charcuterie, you plant your rear end in his bistro and feed it some of the town's most finessed animal fat.

If the wine's your thing, chances are you've already discovered a bar that honours local and international drops with equal reverence. With a partner bar established at Margaret River, Must is up to its knees in a love of the grape.

The list here is, as they say, encyclopaedic. In other words, it's very long and written by people who know what they're on about. Featuring five hundred wines, and at least 50 by the glass, it's a mini-Britannica of plonk.

Happily, the wine scholarship seems shared by all staff in the well-appointed bar. It's the kind of place where you might tell the barkeep your mood and he'll find a Riesling, Pinot or Bordeaux to match it.

The booze erudition spills over into other vats, too. Must will often spend a week honouring whisky, absinthe or any number of tipples. It's a luxe, secular chapel of hooch!
