Set up by the same guys who brought us the scrumptious Gin Palace and wonderlandish Madame Brussels, Collins Quarter raised the bar for inner city venues, then knocked itself down a notch by continuing to call itself a pub, despite spending a fortune on the refit.

This über-modern venue has four bars spread between a generously sized floor plan, with immaculate décor running all the way back to Little Collins Street. At the front is Colin's, literally pitched as a "cocktail pub" at the top end of posh Collins Street - a decidedly lowbrow joke on the establishment. Its small but fabulous selection of wines by the glass or bottle, and elegant cocktail list (sans silly names) has attracted the business crowd as well as the late night cocktail crew in the droves, so either get there very early or very late.

It's hard to avoid trying some morsel from the rather tasty chef's Finger Fork and Knife menu of Charcuterie, such as rabbit liver parfait, or mini beef and mushroom pies, or you could go all out on a more sizeable 250 g Sher Wagyu rump. Like the drinks menu, the food menu is very reasonably priced, especially given the uptown locale.

You can also continue making your way though to the Magnolia Courtyard, a modern outdoor space, which faces onto yet another bar, often used for private functions, or make your way up to Ra, the gorgeous cocktail lounge upstairs. Here you can loll about on very luxurious couches and armchairs, enjoy a slow cigar, sample some French champagne and look out onto the courtyard areas below while pondering what people at the other "pubs" are doing.
