The Grand Hyatt has completed its multi-million makeover, which has included a spanking new restaurant. What a difference! The pleasant, staid space has given way to something modern and dramatic. Collins Kitchen is actually a series of spaces, all furnished in warm dark colours. There’s a lounge area and a main dining room that is full of light from the big windows that look upon Russell Street. The restaurant sports many open kitchens which are trade specific – such as the wok and steamer, grill, seafood, and so on. Above the seafood area is a huge mirror that shows off the display while above the wok and stove areas is a giant sculptural exhaust.

The kitchen spaces determine the food choices, which means there’s something for all tastes. At breakfast, there’s everything from muesli to congree while at lunch and dinner, guest can take a tour of the gastronomic world, starting with Italian prosciutto crudo, or opting for a simple and elegant Caesar salad. The lunch set menus are good value, providing a full meal from the sushi counter, deli, grill or wood oven. Steaks and seafood steal the show, however, with a range of cuts that give diners the option of grass- or grain-fed. In between meals there’s a limited menu and a smart afternoon tea. The wine list is international with a leaning towards South Australian Shiraz and New Zealand Pinot. For pre or post meal drinks, head for the neighbouring RuCo bar which is a terrific venue featuring sculptures by Bruce Armstrong and a gorgeous selection of cocktails and cognacs.

brand new, looks great... mature atmosphere and large range of wines but also great for a beer... good for a relaxed friday drinking session with that touch class.
