After careful consideration, business partners and co-owners Peter Behrendorf and Sophia Prentice decided to leave the corporate rat race and venture into the world of hospitality. With a clear vision for the style of venue they wanted, Sippers came into fruition. A warm, welcoming and intimate restaurant, this Carlton eatery is a mix of formal and informal dining with a lavish, European-inspired feel. Rest on chesterfields or the plush velvet-covered lounge in maroon and burgundy hues, or dine at wooden tables, some linen clad, some not. Upstairs is a function room that hosts regular wine tastings and beer appreciations, poetry and philosophy readings, and monthly speed dating.

Originally a bar-only venue, Sippers gradually began to introduce a tapas style menu that has been a huge success. Best value is the Sippers Banquet: $28 a head, it comprises the chef's choice of 12 dishes and an individual dessert from the tapas menu for four people, or six dishes and dessert between two people. Alternatively, choose options directly from the menu like dukkah seed Turkish bread dips, Spanish empanada, homemade vegetarian arancini balls with blue cheese, and lamb and rosemary meatballs with Napoli sauce. The wine list boasts hand-picked wines from boutique wineries as well as boutique beers, a selection of loose leaf teas, coffee and liqueurs.

Service was dismal, food was pre-cooked and in most cases cold. Stale Bread and biscuits. Not for the faint hearted.
