Lark Distillery creates a gentle, turn-of-the-century feel, with old, oak barrels and leather chairs setting a relaxing scene. The longest licensed distillery in Tasmania, the bar's whiskey of the same name is made from local ingredients and distilled on the premises, along with gin, vodka and ??bush liquor'. So it goes without saying that you'd better have your drinking pants on before you walk in the door (note: they don't sell pants).
Tasmanian beer is also given a fair representation, with Moo Brew, Dark Isle, Hazards and Forester sitting alongside more widespread labels, like Boags and Cascade. For wine buffs, a nice selection of Tasmanian reds, whites and sparklings make for a difficult ponder - which will you choose for the evening? Meanwhile, Australia and France (a cute, 200ml bottle of Moet at $29.50) make up the rest of the list.
And if you need something to soak up that single malt, Lark has a very reasonably priced menu of snacks and meals. Try a Tasmanian smoked salmon platter between friends, or the Ploughman's Lunch if you're after something hearty. And if the mood really grabs you, you can even take home your own piece of the Lark Distillery by purchasing a barrel of their famous single malt whiskey.
