They say people have been drinking at this site since 1880. Apparently for well over a century there has always been a pub here in one form or another. While it may be hard to picture what the main drinking bar would have looked like in the 19th century, you can be sure it didn’t look anything like its current incarnation.

Yes, the Waterloo’s make-over is quite the dramatic affair.  The multi-million dollar re-design is an eclectic mix of the new and the old.  While modern touches such as the cage light fittings, mirrored ceiling and metal stools have certainly brought the old girl into the 21st century, the incorporating of dark wood and chesterfield lounges makes sure there’s an element of warmth about this bar.

Now to the serious end of business, the drinks. The wine list is a well thought out but thankfully not exhausting menu. Whites range from a good selection of rieslings through to some big and bold chardonnays to a good selection of white varieties such as verdelho and pinot grigio. The reds are also well taken care of, as is the bubbly. The range of beers is impressive too. Lots of locals and lots of great imports too. The cocktails are inventive and expertly made. Try a choc orange martini - Plymouth Gin, Campari, Cointreau and Mozart Gold Chocolate.

A good mix of punters converges for after work drinks during the week and it’s a laid back, but stylish affair of a weekend.
