The Vie Bar and Restaurant is the most chic and casual of the Palazzo's three main eateries. While Il Barocco and Vanitas are on hand for the best in a la carte and buffet dining, Vie offers a chance to slip into something more comfortable. Within the minimalist décor, sit and enjoy the beach and natural surroundings from an airy position overlooking the marina. That is not to say that quality is forfeit. Like everything at the Palazzo, sophistication and attention to detail are assured.
Crispy skin Atlantic salmon is served up with garlic and herb-roasted potatoes, steaming gently in their own aroma. A fresh and tasty garnish of apple, herbs and horseradish complements the dish — although it takes a bottle from Vie's artfully selected wine list to perfect it.
Whether you're an international jet-setter or a domestic tourist, there can be few finer aspects to the Australian experience than enjoying the untainted beauty of the Queensland coast. Vie allows you to do so in the company of good wine, fine food, and an air of perfect, unobtrusive relaxation.
