Buffalo Club
Editorial
The Buffalo Club is a restaurant of remarkable style. It overlooks the corner of Brunswick and Wickham streets in the heart of Brisbane's fashionable nightlife quarter, Fortitude Valley. The décor exudes class with dark wooden floors and tables that are complemented by brown leather chairs and soft lighting. Despite the rich lustre of the interior, it is still no preparation for the food to come. Chef Ashly Hicks uses modern and innovative techniques to create unusual and astonishingly delicious dishes. Diners can opt for either a 'Wild Buffalo' bar meal, the eight-course 'Cape Buffalo' menu, or the full 12-course 'White Buffalo'. An extensive wine list is available, or the restaurant can expertly pick wines to match each course to create a unity of flavours.
The content of these menus changes each day so only the freshest ingredients are used. The results are extraordinary. Today the two highlights of the menu are the saltbush-reared lamb with buffalo yoghurt and dehydrated beetroot, and yellowtail with pickled ginger, wasabi, cucumber and soy. Every course is a master work of taste and texture. The brushstrokes of flavour that linger on the tongue complete the palate.
The set menu concept also allows The Buffalo Club to pace the entire meal exquisitely. Each course follows on effortlessly from the previous. Softly enticing starters give way gently to sumptuous main courses, before the warm caress of dessert completes the evening.

The style and layout of the Buffalo Club may be the "first and most poignant impression" but, once you get past that, the overall experience is all about the food--which is amazing. I had the 16 course menu and the whirlwind of tastes and textures was one of the highlights of my "foodie" life. The chef clearly paid attention when learning at the world's top restaurants..but has added on a sensitivity and imagination all his own. Top class food by any standard.

The food was just incredible. Compliments to the chef for a stunning menu. However the service was probably not as good as we had expected. The waiter sounded rehearsed running through the motions. It was difficult to hear what was being said a great deal of the time as well. None the less, the food was superb!
