The Tilbury established itself as an enclave of cool eats and drinks a long time ago, and has done nothing but go from strength to strength since. The location helps - tucked away on the subtle side of Woolloomooloo, the Tilbury has become known for attracting a jazzy crowd on the weekends, a banking and fashion design crowd during the week, and a gay crowd on Sundays. Some may be affronted by the flippant fickleness that the Tilbury embraces, but hey, it's Sydney.

The fundamental premise is somewhere between Italian and mod-Oz. Jugs of Sangria sit comfortably close to pitchers of Pimms on the Summer menu, and Prosecco is sipped casually while accompanying a steak sandwich. Go figure. Regardless, the Tilbury offers a comprehensive list of fine international wines with a generous smattering of easy summer drinking.

Cocktails are not the name of the game here but they do quite well in the name of refreshment. The rosewater and watermelon martini would be sweet beyond hope had it not been cleverly balanced with Absolut Citron. Meanwhile, the Bombay Apple is a delight: Bombay Sapphire, pomme verte, pomegranate liqueur, cucumber, mint and lime. Superb.

The Tilbury is good fun for an afternoon session, but things occasionally start to get painfully serious after dark. If you just feel like a beer though, make sure you check out the website for weekly specials. The Tilbury knows the value of a dollar, and knows that you do too.
