A move from the Republic Building in East Sydney to Surry Hills' funky St Margaret's complex has done nothing to dampen the popularity of Pizza Mario. Quite the opposite, in fact. Pizza Mario is still Australia's only pizzeria that is accredited by the Associazione Vera Pizza Napoletana, making this joint the closest place to a Naples pizzeria that an Antipodean can get without leaving on a jet plane. The new restaurant is sleek and functional in design, with an open plan kitchen this is decked out almost entirely in gleaming marble. The marble plays a pivotal role in making the dough, which is the cornerstone of Pizza Mario's pies.

To become a member of the Associazione Vera Pizza Napoletana, pizzeria's are required to make pizzas with dough that is shaped only by the hands, cooked on the floor of a wood-fired oven and result in a pizza that is crispy yet soft and with a towering, high crust. Pizza Mario has got this nailed and the menu, which doesn't allow for variations, boasts a more-ish selection of gourmet toppings constructed from quality ingredients. You can also choose from a concise menu of salads and the Hawkesbury River squid is well worth a try; it's almost as popular as the pizzas.
