Tucked away behind American Apparel in Darlinghurst, there's another little apple pie slice of the good old US of A. And I do mean tucked - as in back alley, behind a curtain. The owners obviously hankered for a little of that Wild West saloon bar charm, and they certainly worked it with this super-cool dive. Yes, dive, as that's basically the look they've gone for.

Shady Pines features lighting that's barely there, a big, long, wooden bar where beer cans are served up on napkins, and Americana cluttered on walls adorned with stuffed animals and Native American totems. It may sound tacky, but it most certainly isn't - this Cheers-style bar has its tongue knowingly planted in cheek, and it may just be one of the coolest new haunts in Sydney.

The check-shirted bar folks certainly know how to shoot the shit with any soul who finds themselves propping up the bar. And, perhaps surprisingly for a place that serves beer in cans, they can also whip up the finest cocktails. Try a mint julep served in a pre-chilled metal beaker, or go old school wild west with a whiskey sour. The whiskey selection is impressive, and by the time you've imbibed a few of their highly alcoholic concoctions you'll be cussing like you're that dude from Deadwood and spitting in tin buckets.
